Kawanda is a Sanskrit translation of cloudy which embodies the micro-climate in our processing unit in Kampung Kenawat, Aceh Tengah, North Sumatera. Only red cherries are harvested, pulped and then undergo the dry fermentation process. The beans are then dried under the sun on the uprise drying bed. The controlled slow drying is achieved by using a greenhouse dome. It is believed to be able to produce cleaner cup notes while still preserving the Sumateran antique taste of spices. The uniqueness of our Kawanda is that the resting period of the coffee is done in a special way which the locals call the Drying of Tusk coffee process, leaving it with 12% moisture content. This makes the coffee very special since the dry parchment protects the green beans from any alien material which can harm the quality of the entire lot. The coffee then is hulled, sorted based on density, using density sorter machine, and hand-sorted again before it is delivered to your doorstep.
