Gayo Kampung Kenawat Wet Hulled (Semi Wash) or Giling Basah is the traditional processing method which is common in the Sumatera region, Indonesia. During the harvest, we have are highly focused on the quality by only picking the red cherries from a certain altitude to make sure that the cherry has the density and ripeness that we desire. The beans then undergo the dry fermentation phase in which the pulped cherry is stored inside a closed-dry container for 8-12 hours before it is dried under the sun. When the moisture of the parchment reaches 25%, the coffee is hulled, sorted based on density using density sorter machine, and hand-sorted again before it is delivered to your doorsteps.
